Recipe: Mimosa Salad

One of our goals here at the market blog, and through the Sprouts Club recipes, is to show you just how easy it is to make meals at home... how easy it is to cook simply and affordably.

This recipe does just that, and it comes to us from two new vendors to our market this year, Dagmar and her daughter, Christina, authors of the cookbook, Forgotten Favourites.

Forgotten Favourites is a cookbook that brings to life recipes that are a fond memory for so many from their family dining room table.

Dagmar says that her goal is to make cooking at home an easy endeavour.  And she firmly believes that wonderful meals prepared at home and shared together with your family are an easy and affordable thing to do. 

With people relying more and more on take out food, ready-to-go meals and eating in restaurants, the art of home cooking is being lost. Dagmar and Christina want to help you remember what good home cooking is, and they want to help you rekindle that love of forgotten favourites in your own home. They want to bring back the tradition of family meals and gathering with friends around the dining room table, sharing simple, tasty dishes that you would be proud to serve.

Butter Lettuce at S4 Greenhouses

They are sharing this recipe with you today because you will find many of the ingredients at an early spring farmers' market... hot house butter lettuce, farm fresh - free range eggs, radishes (one of the first field crops to ever come in!), greenhouse grape tomatoes and honey.

Christina and Dagmar will be at the the market each week from May 21 until June 18 selling their cookbook, full of those feel good, heritage recipes.
Eggs from Dargatz Family Farm

  • Lettuces are available at S4 Greenhouses, Dargatz Family Farm and Holden Colony. 
  • Farm Fresh eggs are available at Sunworks, Holden Colony and Dargatz Family Farm. 
  • Small, grape tomatoes are available in a rainbow of colours at S4 greenhouses and Dargatz Family Farm. 
  • Radishes can be found at Riverbend Gardens, Dargatz Family Farm and Holden Colony.

MIMOSA SALAD

This colourful salad of bright green lettuce topped with chopped egg can be served at any meal.

Yield:  8 servings

Wash and spin dry:   3 heads of butter lettuce

Alberta honey
Cover:   3 large eggs with enough cold water to cover by 1 inch.  Bring to boil over high heat. Immediately remove from heat and let stand 20 minutes.  Drain and run cold water over the eggs for 2 minutes.  Gently crack the shells and cover with fresh cold water.  Leave for 30 minutes or so. Drain and peel.

Drain:                                     
one 540 ml. jar mandarin oranges

Wash:                                     
1 container grape tomatoes

Wash and Slice:                  
Radishes and fresh, washed, ready to eat tender lettuces from
Dargatz Family Farm
6 to 8 radishes

Make dressing:
Combine:                               
¼ cup olive oil
4 tsp. red wine vinegar
 2 tsp. Dijon mustard
1 pinch salt
1 Tbsp. honey (or 1 tsp. granulated sugar)

Assemble Salad:
Line individual salad plates with the lettuce.  Spread mandarin orange sections over the lettuce.

Top with the grape tomatoes and finely chopped egg.  Garnish with radish slices.
Drizzle with the dressing just before serving.
