Autumn is definitely upon us, and now is the perfect time to start practicing recipes for Thanksgiving. With squash, zucchini, beets, potatoes, pumpkins and other fall vegetables piled high at our vendors' tables, there's enough fresh food for everyone to enjoy. Be sure to savour the last of the summer fruit this week, too, as our fruit vendors will still have a few baskets of strawberries, grapes, nectarines and peaches for us to enjoy. 

SWEFM is constantly working to improve our market to support our community. The River City Chickens Collective will be in the Community Tent this week, providing information about the Urban Hen Pilot with the City of Edmonton. 

The River City Chickens Collective is an informal group of citizens who have been promoting bylaw change to permit backyard hens in Edmonton since 2007. We are very pleased that the City has now approved a pilot project which will see a dozen families enjoying keeping up to 8 chickens in their backyards for the next year. If this goes smoothly Edmonton may soon join other major cities, such as New York, Vancouver, Guelph, and Red Deer, in allowing residents to enjoy these personable creatures, and the fresh eggs that they lay, on a permanent basis.

River City Chickens continues to advocate for chickens and provides information and education about keeping hens in an urban environment. Please check their website or Facebook page for details of a “Chickens 101” workshop on Sunday, October 5th.


  

The Sprouts Program for kids will be accepting new children for the rest of the season. Families can always access the Sprouts recipes online!  For more information on the Sprouts Program and to see the Sprouts recipes for kids, click here.

We ask all Sprouts who have been saving their tokens over the summer to redeem them in the next two weeks! Tokens received in the 2014 season will not be valid in 2015.


Steve & Dan's B.C. Fruit will be bringing their delicious peaches, nectarines, fresh apples, cherries, berries, dehydrated fruit and apple juice this week. 
AIG Produce brings their wonderful cherries, berries and peaches to market directly from Osoyoos, one of Canada's premier fruit-growing regions. 

 

With everything in season, now is the perfect time to try a new vegetable or a new recipe. The vegetable vendors joining us this week are: 

Dargatz Family Farm will be at market this week with their fantastic cherry tomatoes, mini peppers, potatoes, carrots, squash and more. 
The Plot will be with us again this week, bringing fresh-made ketchup and relish, along with carrots, beets, golden beets, mixed potatoes, green onions, white onions, zucchini, heirloom tomatoes, basil and dill.  
Holden Colony brings their whole bounty to market week after week! Expect a variety of fresh vegetables including kale, lettuce, onions, peppers, tomatoes, potatoes and garlic, along with other staples like eggs, frozen chickens, honey, and preserves.
Riverbend Gardens will be bringing their winter squash, carrots, Red Banana, Ama Rosa, and Mozart Potatoes, beets, cabbage, kale, coloured cauliflower and onions this week!
S4 Greenhouses will be at market this week with their fantastic tomatoes, peppers, lettuces, beans and cucumbers. They make adorable $2 mixed bags just for our Sprouts!

Recipe: Sautéed Brussels Sprouts with Bacon


Did you SEE those gorgeous brussels sprouts at the market this week at Riverbend Gardens' stall? That great big, towering pile? This is the season when we can expect to see those great big, gangly stalks covered in mini green cabbages appear at the market. Pete Luckett (of The Greengrocer's Kitchen) says, "any vegetable that shares its name with an elegant European city is bound to have a certain mystique," and I tend to agree. They began widely cultivating them in Belgium in the 16th century, and the name just stuck (but where's the apostrophe, the English Geek in me asks you!?) And of course, there's something else that is confusing about their name... they're not even sprouts at all!

For years, the appearance of these bizarre vegetables, right around thanksgiving, always intimidated me. Don't fall into that trap... they're so easy to cook! They are very tender and delicious... almost sweet, if done right. And they pack a lot of nutrition into each bite.

so what's so great about eating brussels sprouts?
These mini cabbages are powerful cancer preventers.
Brussels sprouts are members of the cabbage family. They make it right into the beginning of the 150 Healthiest Foods on Earth book: Cabbages in general probably contain more cancer-fighting nutrients than any other vegetable family. This claim to fame stems from the sinigrin chemical that they contain because it actually suppresses precancerous cells. Brussels sprouts also contain isothiocyanates and sulforaphane which inhibit cell proliferation, neutralize carcinogens and help to detoxify environmental toxins. Not bad, eh? It's time to give these little pearls a new place in your diet.

They're a cold weather vegetable, best in late September around these parts. At the grocery store, they're usually sold lose. But at the farmers' market, you can pick them up in their original, weird and wonderful state... all attached, like tiny, hard rosettes, on a towering stalk.

Select sprouts that are tightly wrapped in their outer leaves, no more than an inch and a half in diameter, and that feel heavy for their size. Avoid any that seem puffy, loose or are wrapped in yellowed outer leaves. Pete suggests storing them in a plastic bag in the fridge, unwashed, for up to 5 days and he says that the sooner you use them the better, because they grow cabbage-y tasting with age.

how do you prepare them for the kitchen?

Just pull each ball off the stock and then rinse them under cold, running water. Trim the stems and remove any loose, outer leaves. Cutting a small cross in the stem end helps them to cook more evenly. Small sprouts can be left whole. Large ones should be cut in half or even quartered so that they cook through without getting soggy on the outside.

how do you cook brussels sprouts? 
They are very versatile in the kitchen. It's best if you either cook them very quickly or give them a slow braising.

  • They can be briefly boiled (for no more than 4 minutes), then drizzled with butter and seasoned with salt and pepper. 
  • They can be sliced thinly and stir fried briefly in olive oil, then seasoned with fresh ginger and lemon juice. 
  • They can be parboiled and added in the last 20 minutes of cooking to a roast. 
  • And they can be braised, slowly and lovingly cooked in a a little wine or stock, for about 20 minutes.

What doesn't go well with bacon? I mean... really!

ingredients
8 strips of bacon, chopped
1 onion, thinly sliced (optional)
1 lb brussels sprouts, trimmed and shredded

directions
Fry the bacon and onion, if using, in a large frying pan or a wok until the bacon is crisp and the onions are soft and browned. Stir in the shredded sprouts, and cook for 3-4 minutes, until the edges begin to brown. Serve at once.

With fresh fall vegetables and fruits coming from the fields, it's a great time to get your fill of pumpkins, squash, apples and pears, not to mention all of the fantastic ready-to-eat foods at SWEFM! This week is also our last collection date for the Edmonton Food Bank, so please remember to bring your fresh fruit and vegetables to donate.

This week is our final Harvest Festival of the season in support of the Edmonton Food Bank. Enjoy our local bounty of fresh vegetables and help others in our city enjoy them, too! As part of the Plant a Row, Grow a Row program, you can donate fresh vegetables from your garden on-site this Wednesday or purchase fresh vegetables from our vendors to donate. The produce will be used by the Edmonton Food Bank to support those in need and allow everyone in Edmonton to eat fresh and healthy foods. 

Produce that is easy to prepare and doesn't spoil quickly is the most helpful, so be sure to bring your potatoes, lettuce mixes, beets and carrots! Our volunteers in the info tent will have helpful shopping guides to help you purchase appropriate (and delicious) produce items to donate at market. We're aiming to donate 1000 lbs of produce this year, so please help us reach our target! We also encourage our Sprouts children to use their tokens to donate fresh vegetables this week. Nothing tastes better than helping others!

Recipe: Chocolate Zucchini Loaf

When looking for zucchinis at the market, you can
sometimes find them hidden amongst the squash,
like the yellow ones here at Riverbend Gardens' stall.
People are often intimidated when it comes to baking, preferring to buy their baking from the grocery store where it often tastes very bland or is loaded with fat and sugar in an attempt to improve its shelf life. There really is nothing like baking at home... not only does the end result taste fantastic, but it makes your house smell divine! And a loaf is the best way to start your adventure into home baking... other than burning it or undercooking it, there's really nothing you can do to mess it up! There's no careful mixing, no delicate icing, to artistic and creative flair needed to turn out a delicious result each and every time.

Our recipe today comes from Tammy, one of our Info Tent volunteers who comes to market every week. She brought some of this delicious Chocolate Zucchini loaf to market a couple of weeks ago and we all loved it! Now she is sharing the recipe with you all. It is a deep, dark brown colour from the cocoa powder in the recipe that mingles with all of the ingredients, giving a chocolate flavour to each and every bite.

a healthy diet is a varied diet 
It is one that includes a lot of vegetables, limits fat and sugar, and watches portion size. There is always room for a treat in a healthy, balanced diet... and a slice of this zucchini chocolate loaf fits the bill!

Sometimes zucchinis are massive!
That's when you use them in baking.
One thing to note in Tammy's recipe is that she has used mini chocolate chips. I've always preferred using mini chips because they go farther in your baking, spreading out chocolate chunks throughout and giving the impression that your recipe, be it cookies or brownies, loaves or an ice-cream topping, making your dessert seem far more chocolately than it actually is. Tammy suggests substituting unsweetened cocoa powder for the chocolate chips. That simple substitution cuts down both the sugar and the fat in this recipe, making it healthier, and not adversely affecting the flavour.

This loaf freezes well... and that is one way to avoid temptation... slice it up, package it in small portions so that you freeze it in small batches, and you won't be tempted to devour it in one sitting!

One thing that we do at our house is pour the batter into mini loaf tins: like rectangular muffin tins, there are six to a pan. These freeze well and can be sliced for small treats. Top each slice with peanut butter, maple butter or your favourite nut butter and they are a healthy snack or a wonderful breakfast start to the day! You need to cut the baking time down significantly (by a little less than half) if you use mini loaf tins... to about 35-40 minutes.

zucchinis 

Technically a summer squash, zucchini is prized for its versatility in cooking. It's mild flavours adapt well to mediterranean cuisine, work with any tomato based dish.. and add moisture and texture to sweet baking! They can even be eaten raw, and are delicious dipped in some of Louie's Tzatziki (at Theo's Greek Kouzina).

when selecting a zucchini at the market, look for smooth skinned, firm flesh with no blemishes or soft spots. They will keep at least a week on the refrigerator shelf.

This is an amazingly versatile veggie. Picked young, it is delicious grilled or stir fried. When it grows quite large, which it does with amazing speed in a summer garden, it is best used for baking. You can eat the skin, as it is soft... so simply wash off the zucchini, trim off the blossom end, and grate it, skin and all, into this recipe.

good for the eyes! Zucchinis are high in heart-healthy potassium, along with vitamin A, beta carotene, lutein and zeaxanthin. Lutein and zeaxanthin are carotenoids that protect eyes against macular degeneration and other vision problems. Another great thing about summer squashes like zucchini is that they have a very high water content... so they are a "high volume" food that is excellent to eat when you are trying to shed a few pounds because they are both filling and low in calories.

how to cook a zucchini
Pete Luckett, of The Greengrocer's Kitchen says, The best way to cook a zucchini is quickly, and with as little liquid as possible. Slice zucchini in rounds or strips, or leave very small ones whole.Steamed lightly or sautéed in butter, zucchini makes a delicious side dish, needing nothing more than a squeeze of lemon juice and some salt and pepper. Larger zucchini can be sliced thickly, brushed with olive oil, seasoned, and thrown on the grill.

Chocolate zucchini loaf 
Zucchini plants have a way of multiplying. When your garden overflows, try this new chocolatey twist on the usual bread. This recipe makes 1 loaf (12 slices). It takes 15 minutes to prep and 60-65 minutes to bake in a 350F oven.
Made into little loaves, sliced, then topped with peanut butter
or, better yet, maple butter from Grand Maple Farm at the
market, and you have a delicious snack.
ingredients
1¾ cups all purpose flour
½ cup granulated sugar
¼ cup packed light brown sugar
3 Tbsp. unsweetened cocoa powder
¾ tsp. baking powder
½ tsp. baking soda
½tsp salt
2 eggs
¾ cup vegetable oil***
1 tsp. vanilla
1 cup coarsely grated zucchini (about 3½ ounces)
½ cup semi-sweet mini chocolate chips***
confectioners' sugar (icing sugar) for dusting

*** this can be made healthier still by reducing the oil to 1/4c  and adding back in 1/2c of plain, no fat yogurt or unsweetened applesauce for the moisture
*** you can substitute cocoa powder for the cholocate chips if you are trying to decrease the fat & sugar in this recipe, but using MINI chocolate chips makes them go farther in this recipe, spreading throughout and making it seem far more chocolatey than it actually is.

directions
1. Heat oven to 350F. Coat a 3½ x 4½ x 3" loaf pan with non-stick cooking spray.
2. Sift together the flour, sugars, cocoa powder, baking powder, baking soda and salt into a large bowl.
3. Beat the eggs, oil and vanilla in a medium-sized bowl until well combined. Stir in the zucchini.
4. Stir the egg mixture into the flour mixture until moistened and a stiff batter just comes together. Do not over mix.
5. Fold in the chocolate chips or cocoa.
6. Spoon the batter into the prepared pan.
7. Bake in a pre-heated 350F oven for 60-65 minutes or until a wooden pick, inserted in the centre of the loaf, comes out clean.
8. Turn out onto a rack to cool completely. Before serving, dust with confectioners' sugar.

  • Maple butter can be found at Grand Maple Farm along with maple syrups and maple candies.
  • Theo's Greek Kouzina carries delicious tzatziki and red pepper dips that work well with zucchini finger slices.

Fresh Sheet: September 17, 2014


It seems like summer's back!
Join us WEDNESDAY in the Terwillegar Recreation Center Parking Lot from 4:30-7:30


Last week we were wearing our favourite sweaters, but this week we'll be pulling our shorts out again! Be sure to visit the market to load up on your favourite fall vegetables to include in your last barbeques of the season. After all, nothing is better than corn on the grill!

For market shopping tips, be sure to check out this page to ensure your market visit is everything it should be. And remember, please leave Fido at home- no dogs are allowed where food is being served!  


Our friends from Hillaby's Tools For Cooks will be back this week to show us how to prepare corn faster and easier! Stop by their tent to learn more about how simple kitchen tools can prevent injury, wasted food, and wasted time. Once you've picked out your favourite tools, be sure to visit their retail location on 23rd Ave to purchase one for you and a pal! After all, a happy cook is one with a well-stocked kitchen.


Riverbend Community League will be in the Community Tent this week promoting their upcoming event Art in Our Park, happening on September 20. 


  

The Sprouts Program for kids will be accepting new children for the rest of the season. Families can always access the Sprouts recipes online!  For more information on the Sprouts Program and to see the Sprouts recipes for kids, click here. 

The inflatable slide will also be here this week, weather permitting.


Fresh and ripe fruit is flowing steadily from B.C. this week. The fruit vendors joining us at SWEFM this week are:

Red Apple B.C. Fruit will be at market with their fresh berries, apples, peaches and nectarines.
Steve & Dan's B.C. Fruit will be bringing their delicious peaches, nectarines, fresh apples, cherries, berries, dehydrated fruit and apple juice this week. 
AIG Produce brings their wonderful cherries, berries and peaches to market directly from Osoyoos, one of Canada's premier fruit-growing regions. 

 

With everything in season, now is the perfect time to try a new vegetable or a new recipe. The vegetable vendors joining us this week are: 

Dargatz Family Farm will be at market this week with their fantastic cherry tomatoes, mini peppers, potatoes, carrots, squash and more. 
The Plot will be with us again this week, bringing fresh-made ketchup and relish, along with carrots, beets, golden beets, mixed potatoes, green onions, white onions, zucchini, heirloom tomatoes, basil and dill.  
Holden Colony brings their whole bounty to market week after week! Expect a variety of fresh vegetables including kale, lettuce, onions, peppers, tomatoes, potatoes and garlic, along with other staples like eggs, frozen chickens, honey, and preserves.
Riverbend Gardens will be bringing their Edmonton-grown corn on the cob, winter squash, carrots, Red Banana, German Butterball and Blue Russian Potatoes, beets, dill, cucumbers, cabbage, kale, coloured cauliflower and broccoli this week!
S4 Greenhouses will be at market this week with their fantastic tomatoes, peppers, lettuces, beans and cucumbers. They make adorable $2 mixed bags just for our Sprouts!

Jerky Jerky will be bringing their Alberta-made beef jerky to market this week. They always have samples, so be sure to stop by and try some!
Sunworks Farm will be bringing their ethically-raised meats for you to enjoy this week. From full chickens to their ever-popular sausages, Sunworks is your new favourite meat destination!

 

Who doesn't like delicious baked goods? Our vendors have great items, from sweet and soft cupcakes to salty squares made with cheezies, to wholesome bread made with freshly milled flour. With gluten-free and nut-free bakers, there's something for every lover of baking at SWEFM! The bakers joining us this week are:

Celebrate, Gluten Free is out resident gluten-free baker, with breads, brownies and pastries all made in a gluten-free kitchen. It's the perfect vendor for celiacs or those looking for some of the best tarts in Edmonton!
Sweet Stuff will be bringing her wonderful mini and full-sized cupcakes in a variety of flavours, along with her oatmeal raisin cookies that are perfect with a cold glass of milk.
Confetti Sweets will be at market again this week with their awesome cookies. If you haven't tried the coconut cookie yet, you're missing out!
Cafe O' Play's Little Crumbs Bake Shop is SWEFM's only nut-free baker, with all sweets being made in a completely nut-free facility. Check out all of their fun takes on simple squares!
Prairie Mill Baking Co. makes all of their breads the morning of market day with fresh-milled flour and wholesome ingredients. 

 

We know you lead busy lives, and our ready-to-eat food vendors are here to help! With options from Turkish to Indian to vegan to sweet, these vendors always have something to help you satisfy a quick craving or serve dinner to your family. Our ready-to-eat vendors joining us this week are: 

Honest Dumplings will be at market with their absolutely wonderful and healthy dumplings. Ray uses fresh ingredients to colour and fill her products, so be sure to ask her all about her process!
Peter's Lakeview Farms has the freshest saskatoon berries, jams and pies in Edmonton! With their chemical-free saskatoons picked fresh and baked directly into their delicious pies, there's no going wrong with a slice alongside some vanilla ice cream!
Long Lost Foods is our resident vegan vendor, bringing pizza bombs, hummus and dips all made without animal products. Be sure to stop by and try a sample!
Cravings Gelato  is a popular vendor on hot market days, and for good reason! They bring handmade artisan gelato to market in a variety of flavours. The types available rotate week-to-week, so there will always be a new favourite waiting for you!
Fruits of Sherbrooke will be at market this week with their popular preserves made from rescued fruit in Edmonton neighbourhoods. This non-profit society does wonderful work in our community and makes fantastic jam. It's a win-win! 
Mini Kitchen makes fantastic Indian and Thai food for you to take home, heat and serve. If you haven't already, be sure to pick up her delicious samosas with dip! 
Theo's Greek Kouzina will be bringing their wonderful pitas, dips, and olives to market this week. Make a wrap with fresh market vegetables and their tzatziki for a healthy lunch this week!

 

Market shopping for local foods can leave you feeling hungry! Our food truck and concession line up is the perfect way to end your evening at market, with healthy and indulgent options that are sure to satisfy everyone. The food trucks joining us this week are:

Knosh Catering will be joining us with their delicious UK comfort food. They are a part of Mealshare, where they'll donate a meal to those in need when you purchase an item on their menu with the Mealshare logo!
Yellowbird Cafe Truck is back again this week, serving a wide variety of Japanese dishes to SWEFM guests. If you're looking for a dinner option to fill you up, Yellowbird is a great choice! 
Bully Food Truck is a SWEFM staple and will be offering their fantastic comfort food again this week. Try their Locker Room Burger to support a good cause!
Fat Franks is back and will be ready to serve you their delicious hot dogs and smokies with all the fixings! 
The Pink Kernel will be at market offering mini doughnuts, cotton candy and snow cones. Their iced tea is a popular treat for thirsty kids and adults!
Original Canadian Kettle Corn will be serving up their freshly-popped kettle corn at market this week! If kettle corn isn't your thing, they also have salty popcorn for the crunch without the sweetness!
