Fresh Kohlrabi Slaw



Have you ever been at market and seen kohlrabi, with its green or purple dome and four leaves sticking up and thought, "What on earth could I cook with THAT thing?!" This week, we have a recipe that's healthy, delicious, perfect for hot weather and includes two market vegetables that tend to stump shoppers: kohlrabi and fennel.

Kohlrabi is a member of the Brassica family, making it very similar in flavour to many of its cousins: kale, broccoli, cauliflower, and of course, cabbage. It has a firm crispy texture, tastes like a cross between cabbage and mild turnips, and is absolutely delicious raw in salads and slaws. The green and purple colours have the same flavour and colour of flesh inside, though they do offer slightly different phytonutrients. In addition to being a fresh seasonal treat, kohlrabi is also a nutrient powerhouse, offering vitamins that support the immune system and healthy digestion.

Kohlrabi slaw is perfect as a side for dinner or a main for lunch!
Fresh Kohlrabi Slaw

ingredients
3/4 c. kohlrabi, thinly sliced into matchsticks
1/2 c. fennel, thinly sliced
2 cobs corn, shucked
2 cloves of garlic, thinly sliced
2 tbsp butter
100 ml White Wine 1 c. crème fraiche or sour cream
2 tbsp mayonaise
1 tbsp vegetable oil
1 tbsp apple cider vinegar
2 sprigs of thyme, leaves plucked
4 sage leaves, thinly sliced
1/2 c. apple, thinly sliced into matchsticks
1/4 c. sweet or green onion, thinly sliced
Salt and pepper to taste

directions
1. Lightly sauté the corn with the butter and garlic.
2. Once lightly browned, add the white wine and reduce until almost dry. Remove from heat and allow to cool.
3. In a bowl, whisk together crème fraiche (or sour cream), mayo, canola oil, apple vinegar, thyme, sage and seasoning.
4. Add in the kohlrabi, fennel, corn, apple, and onion.
5. Mix everything together and serve.

This will last in the fridge for a day or two, so it's perfect to pack for lunch! Adding other fresh vegetables, like grated carrots and thinly sliced radishes is a perfect way to add a twist to this basic slaw recipe.

For those of you looking for other ways to introduce healthy eating into your lifestyle, our Health Tours run every week. Stop by the info tent to talk to one of our nutrition guides who will answer any questions you may have and help you shop for healthier options.

As your favourite community market, we do our best to connect you to your neighbours!

The Devonshire Care Centre will be in our Community Tent this week, providing guests information about their accredited long term care centre. They strive to offer a warm, friendly and inviting atmosphere for our residents, families and employees, so be sure to say hello and ask them some questions!

The Servus Credit Union tent at this week’s Farmers’ Market will be a monstrous amount of fun!
Servus Heritage Festival 2014 (August 2nd-4th) is kicking off in just a couple of weeks at Hawrelak Park! For the first time ever, Servus is exclusively offering food tickets at a 20% discount.  Drop by the Servus tent and learn more about this exclusive deal!  You can also ENTER TO WIN 4 sheets of Servus Heritage Festival food tickets (Value: $100.00 CND) onsite at this week’s Farmers’ Market.  Join Edmonton and come savour the sights, sounds and aromas from over 60 pavilions representing over eighty-five cultures.

The Sprouts Program for kids is filled for the season, but families who missed out on registration can always access the Sprouts recipes online! Sprouts families are asked to participate in a study from University of Alberta. Participation in the study involves completing three short surveys over the next three months. Your participation in the the research study is voluntary, but much appreciated! For more information on the Sprouts Program and to see the Sprouts recipes for kids, click here.

The inflatable slide and bouncy castle will also be here this week, weather permitting.

Red Apple B.C. Fruit is back again this week with their delicious B.C. apples, pears, and fresh berries.
Steve & Dan's B.C. Fruit will have lapin and rainier cherries, apricots, peaches, blueberries, raspberries, blackberries, transparent apples and their dehydrated fruit, sparkling juice, and 100% apple juice.
AIG Produce will be at market this week, bringing fresh fruit and berries straight from B.C..

The Plot will be at market this week with herbs, lettuce mixes and preserves.
Dargatz Family Farm will be bringing spring vegetables, lettuce mixes, preserves, eggs, food plants, and tomatoes to market this week.
Holden Colony will be bringing a variety of fresh vegetables, including peppers, radishes, cucumbers and tomatoes, root vegetables, eggs, chickens, and delicious preserves.
S4 Greenhouses will be bringing their freshest tomatoes, cucumbers, peppers and lettuce.
Riverbend Gardens is back this week with fresh vegetables from the field including peas, carrots, potatoes, swiss chard, beets, fennel, and more.


Our meat line-up has some old favourites and some new vendors to try:

Raspberry and Cocoa is back this week with their delightful croissants and baked goods. Warm them up in the oven when you get home for a to-die-for treat!
Celebrate, Gluten Free is the wonderful for those who avoid gluten. She always has a feature item or two, so be sure to stop by every week!

Orange Avocado Jewelry by Sandra Paetsch is returning for the last time this summer to the SWEFM.  She will be bringing her NEW druzy heart pendant necklaces, bracelets and earrings as well as her mini pave bead necklaces. Druzy stones are characterized by clusters of minute quartz crystals formed on the surface of a host stone.  They sparkle in the sunlight and are sweet reminders of those you love.

Summer Flower Salad



 
Salads can have a bad rap, but once you get past iceberg lettuce mix and bottled dressing, they can be delicious, fun to make and infinitely healthy!

This salad is meant to be played with based on what's available in your refrigerator and the flowers in your garden. Love celery? Add it! Have some lavender flowers? Throw them in! Be sure to have as many colours as possible, because more colours mean more phyto-nutrients and health benefits ready to be had from your salad. By adding a protein source like nuts or chicken breast and some bread crumbs or toasted pita, this salad can easily become a main dish on hot summer evenings where heating up the oven isn't an option.

Summer Flower Salad
Get your hands dirty picking flowers for your salad!

ingredients
4-6 cups Mesclun salad mix
3 Carrots, chopped or grated
1/4 c. Green peppers, chopped
1/4 c. Fresh mint leaves, shredded
2 tbsp. Fresh dill, finely chopped
5 Cocktail tomatoes, sliced
1/2 cup Edible flowers: try pansies, chive blossoms, borage, dames' rocket, roses (domestic or wild), dandelions, begonias, sunflowers, lilacs, fuchsias, violets, nasturtium or snapdragons.
1/2 Lemon, juiced
1-2 tbsp Olive oil
1-2 Cloves garlic, finely chopped
1 tbsp Sumac (you can find sumac at Bulk Barn in the spice aisle)
Salt and pepper to taste

directions
Tear salad greens and most of the flowers into bite-sized pieces and toss in a large salad bowl with the carrots, green peppers, mint, dill and tomatoes. Reserve a few flowers for garnish.


In a separate bowl, mix lemon juice and olive oil together by quickly beating with a fork. When the mixture is emulsified and is the desired acidity, add sumac, garlic, salt and pepper.

Pour dressing over salad, toss, and serve on individual plates. Garnish with remaining flowers and lightly season with coarse salt, if available. Enjoy!

Our friends from Forgotten Favourites will be doing a cooking demonstration at the info tent this week! They'll be showing guests how to cook up a delicious salad that's perfect for the summer months: Szechuan Peanut Pasta Salad. Be sure to save room in your shopping bag for a recipe book from Forgotten Favourites and the market ingredients to make the salad!

Vegetable Pink Lemonade


 


Who doesn't love an ice-cold pink lemonade on a hot summer afternoon? This week, we have a healthier version of this summer classic made without any added sugars and the healthy vitamins and phytonutrients found in your favourite market vegetables. The beets are high in folate and potassium which are great for the heart, and the carrots are high in beta-carotene and vitamin A to promote healthy eyes. It's the perfect (and healthy) way to refresh and recharge after a busy day in the sunshine!

If you have a juicer, you can make this refreshing recipe that's sure to be a hit with the whole family. To further sweeten the drink, blend the lemonade with strawberries, raspberries and ice to create a Pink Lemonade Smoothie.

Don't have a juicer? Toss some finely chopped beets and carrots into the blender for your next smoothie. You'll get the benefits of the vegetables without buying a juicer!

Vegetable Pink Lemonade

ingredients
3 baby beets, tops on
4-6 cups chopped carrots
3 stalks rhubarb (optional)
1 apple (optional)
1 lemon per 2 c. lemonade
Sparkling water (optional)

directions
Juice the baby beets, carrots and, if desired, rhubarb and apple into a measuring cup. Taste the base and sweeten by juicing more carrots or apple if desired. Reserve the pulp (you can freeze it in bags) to add to your next cake recipe... it makes it extra moist and adds healthy fibre!

Squeeze lemons into a pitcher, using 1 lemon for every 2 cups of finished lemonade.

Pour vegetable mix into pitcher, using 1/2 cup of mix for every 2 cups finished lemonade.

Top with sparkling or tap water and chill in the fridge. Garnish with a twist of lemon and enjoy!

Our vendors are competing for your votes this week in our Potato Ingredient Challenge! Vendors, including Little Crumbs Bake Shop, Knosh Catering, Riverbend Gardens and more will be featuring their best work featuring potatoes to fight for your vote. All votes will be entries into a draw to win a prize for the most popular item, so be sure to make your opinion count! Stop by the info tent to participate in the challenge and to enter the draw.

Premier Dave Hancock will be at the community tent this week to meet members of the community and answer any of your questions about the provincial government. It's a great opportunity to shake the Premier's hand, take a photo and learn more about what's going on at the Legislature! Stop by the community tent to say hello.
  

The Sprouts Program for kids is filled for the season, but families who missed out on registration can always access the Sprouts recipes online! Sprouts families will be contacted this week by researchers from the University of Alberta to complete a survey. Your participation in the the research study is voluntary, but much appreciated! The inflatable slide will also be here this week, weather permitting.

We don't fail to entertain at the Southwest Edmonton Farmers' Market! Check out this week's entertainers and buskers below. 

Cheerific will be on site this week wowing you as you shop, and our musical lineup includes a young band featuring Jesse and Willow who are excited to debut at SWEFM, along with Brogan and his accordion. Last but not least, balloon artists Pretzel and Russ and face painter Lady Dolphin will be joining us again this week, weather permitting.

Cherries and strawberries are ripe and ready for you to devour! Visit our all-star fruit vendors for the best tastes of summer. 

Red Apple B.C. Fruit is back again this week with their delicious B.C. apples, pears, and fresh berries.
Steve & Dan's B.C. Fruit is joining us with their strawberries, cherries, winter apples, winter pears, hazelnuts, sparkling juice, 100% apple juice and dehydrated apples. Check out their oh-so-popular Sprouts cups for $2 (or a Sprouts token!). They're a great healthy alternative for a mid-market snack!
AIG Produce will be at market this week, bringing fresh fruit and berries straight from B.C..

 
There's nothing like fresh local vegetables for summer salads and barbeques! Check out what our veggie vendors are bringing this week:


The Plot will be joining us at market with mesclun mix, spinach, radishes, herbs along with her delicious wine jellies and a new green pepper jelly.
Dargatz Family Farm will be bringing spring vegetables and plants.
Holden Colony will be bringing a variety of fresh vegetables, including peppers, radishes, cucumbers and tomatoes, root vegetables, eggs, chickens, and delicious preserves.
S4 Greenhouses will be bringing their freshest tomatoes, cucumbers, peppers and lettuce (along with those adorable $2 bags for our little Sprouts).
Riverbend Gardens is back this week with new potatoes and other fresh veggies including spinach, radishes, swiss chard and more. 


Our meat line-up has some old favourites and some new vendors to try: 
Sunworks Farm brings a variety of grass-fed and organic meats to market. Be sure to ask for a sample when checking out their stall, but be prepared to fall in love!
Jerky Jerky is back this week bringing his fantastic jerky in a variety of flavours. They offer samples, so be sure to give one a try!


Our bakers are the best! There's no better way to get over the mid-week hump than a special treat from a local baker. 
 

Raspberry and Cocoa is back this week with their delightful croissants and baked goods. Warm them up in the oven when you get home for a to-die-for treat!
Blue Rose Baking Co. is with us again this week and will be serving up her gorgeous vegan treats. Her cupcakes are not just a treat for the eyes, they taste amazing, too!
Celebrate, Gluten Free is the wonderful for those who avoid gluten. She always has a feature item or two, so be sure to stop by every week!
 
Sweet Stuff will be stocked full with her adorable cupcakes. Her Oreo "cookies" are the ultimate indulgence after a long evening of walking the market!
Confetti Sweets will be back again with their delicious cookies. They have so many varieties you'll have to come back week after week to try them all!
