Spicy Kale Chips


Kale has become a very popular vegetable in recent years, and it's easy to see why! Kale is packed with nutrients including Vitamin K, iron, Vitamin C and fibre, along with unexpected health benefits like calcium and protein. With health-conscious eaters demanding more kale year after year, there have even been recent worries about a shortage! Luckily, no such shortage is occurring, and our market is full of three varieties of kale: Green, Purple, and Black Russian. Each are delicious, healthy and offer different phytonutrients to benefit your body.

If this dark leafy green hasn't found its way to your kitchen yet, kale chips are a great way to introduce them to your family. These chips are light, crispy, and don't taste like a health food, which makes them the perfect way to get vegetables in the hands of picky kids. Don't be fooled by the word "chips", though: kale chips are a great way to fit in one of the market's healthiest food into your snacking routine! Sneak in a bag of kale chips into your next visit to the movie theatre, pack them for lunch, and have them on-hand to crumble and add on top of pasta or salads. Spicy Kale Chips

ingredients



1 bunch kale (washed and thoroughly dried)
2 tbsp. olive oil
1/2 tsp. salt
1 tsp. red pepper flakes
1/2 tsp. cayenne pepper
1/2 tsp. paprika
1 tsp ground pepper

instructions

1. Preheat oven to 400ºF
2. Remove main stem from kale leaves and tear into medium-sized pieces.
3. Place kale on a cookie sheet with little or no overlap.
4. Drizzle olive oil over kale, spread and massage oil into leaves evenly using your fingers or a paintbrush.
5. In a separate bowl, mix salt, cayenne pepper, paprika and pepper.
6. Sprinkle spice mix evenly over kale.
7. Bake for 8-12 minutes, checking frequently. Once most leaves are crispy, your chips are done.
8. Store in an airtight container for 3-4 days. Enjoy!

Fresh Sheet: August 13, 2014


 Fresh Food is Coming Your Way!
Join us WEDNESDAY in the Terwillegar Recreation Center Parking Lot from 4:30-7:30

This week's market will be full of fresh foods from all of our fabulous local vendors. Challenge yourself to ask questions about your food, like, "When was this vegetable picked?", "How should I prepare this?", and "What's freshest this week?". Asking questions shows you're engaged in our vendors products and really lets them teach you more about their great local food. Start the conversation!

For market shopping tips, be sure to check out this page to ensure your market visit is everything it should be. And remember, please leave Fido at home- no dogs are allowed where food is being served!  


Think you can only get protein from meat? Think again! Stop by the info tent to take part in this week's SWEFM challenge: Protein Power! It's the first installment of our macro-nutrient information series to help teach you about the building blocks of a good diet before school starts again. Look forward to our other themes, Carbohydrates are Complex and Fat is your Friend in the coming weeks!

We will have nutritional information about protein and the important role it plays in a healthy diet, plus show you some of the surprising places you can find protein-rich foods at our market, including Sunworks Farm, Honest Dumplings, Confetti Sweets and more! Our volunteers will also be loaded with nutrition tip sheets that are all about to help you with the challenge and teach you more about the benefits of this important nutrient. AIG Produce brings their wonderful cherries, berries and peaches to market directly from Osoyoos, one of Canada's premier fruit-growing regions.

The Plot will be with us again this week, bringing Baby Gourmet potatoes, beets, beans, rainbow Swiss Chard, green onion, basil, cilantro, zucchini and kale chips. 
Holden Colony brings their whole bounty to market week after week! Expect a variety of fresh vegetables including kale, lettuce, onions, peppers, tomatoes, potatoes and garlic, along with other staples like eggs, frozen chickens, honey, and preserves.
Riverbend Gardens will be bringing their Edmonton-grown corn on the cob (!!), carrots, German Butterball and Butterfly potatoes, beets, fennel, dill, cucumbers, cabbage, kale, coloured cauliflower and broccoli this week!
S4 Greenhouses will be at market this week with their fantastic tomatoes, peppers, lettuces, beans and cucumbers. They make adorable $2 mixed bags just for our Sprouts!

Celebrate, Gluten Free is out resident gluten-free baker, with breads, brownies and pastries all made in a gluten-free kitchen. It's the perfect vendor for celiacs or those looking for some of the best tarts in Edmonton!
Sweet Stuff will be bringing her wonderful mini and full-sized cupcakes in a variety of flavours, along with her oatmeal raisin cookies that are perfect with a cold glass of milk.
Confetti Sweets will be at market again this week with their awesome cookies. If you haven't tried the coconut cookie yet, you're missing out!
Cafe O' Play's Little Crumbs Bake Shop is SWEFM's only nut-free baker, with all sweets being made in a completely nut-free facility. Check out all of their fun takes on simple squares!
Prairie Mill Baking Co. makes all of their breads the morning of market day with fresh-milled flour and wholesome ingredients.

Honest Dumplings will be back this week with her absolutely wonderful and healthy dumplings. She uses fresh ingredients to colour and fill her products, so be sure to ask her all about her process!
Peter's Lakeview Farms has the freshest saskatoon berries, jams and pies in Edmonton! With their chemical-free saskatoons picked fresh and baked directly into their delicious pies, there's no going wrong with a slice alongside some vanilla ice cream!
Superfood Station will be serving up her delicious Japanese-inspired treats and refreshing sodas made with superfoods at market this week. With ingredients like kale, carrots and gogi berries, her sodas and desserts are a guilt-free indulgence!

Cravings Gelato  is a popular vendor on hot market days, and for good reason! They bring handmade artisan gelato to market in a variety of flavours. The types available rotate week-to-week, so there will always be a new favourite waiting for you!
Fruits of Sherbrooke will be at market this week with their popular preserves made from rescued fruit in Edmonton neighbourhoods. This non-profit society does wonderful work in our community and makes fantastic jam. It's a win-win! 
Mini Kitchen makes fantastic Indian and Thai food for you to take home, heat and serve. If you haven't already, be sure to pick up her delicious samosas with dip!

La Poutine will be at market with their delicious poutines. Their "Canadian" poutine is an indulgent treat on an August market evening!
Yellowbird Cafe Truck is back again this week, serving a wide variety of Japanese dishes to SWEFM guests. If you're looking for a dinner option to fill you up, Yellowbird is a great choice! 
Knosh Catering is back with their unbelievably delicious U.K. comfort food. They love to use fresh fruits from our B.C. fruit vendors at SWEFM... Ask them what's on special this week!
Bully Food Truck is a SWEFM staple and will be offering their fantastic comfort food again this week. They have great salad options for those looking for something a little lighter in the summer heat!
Fat Franks is back and will be ready to serve you their delicious hot dogs and smokies with all the fixings!

Recipe: Dressing up the Fruit Salad

Much ado has been made about berries at the market recently... and for good reason! The fruit vendors' tables are brimming with baskets of blueberries, blackberries, raspberries and strawberries. Often arranged in a checkerboard, they are a feast for the eyes, an explosion for the tastebuds, and an enticing beauty to behold.

 and so very unlike their taste and texture once dried.
Then there are the wonderful summer fruits that are coming in now... those cherries, nectarines, plums, peaches, apricots and melons. Put any combination of these together and you have the fixings for some downright delicious, very beautiful and extremely healthy, no-cook (a.k.a. no-heating-up-the-kitchen) summertime desserts.

and crunchy. Let them ripen up and soften up and they are
 sweet, juicy flavour bombs!
For a few years, my Great, Great Aunt Gertie lived with us in my childhood home. My grandfather's aunt, she grew up on a farm near Stayner, in southwestern Ontario, and one of the traditions that she stuck to like glue over the years was her desire to end every meal with "a little something sweet." Clearly, the fact that she lived a very l-o-n-g life shows that this little indulgence didn't do her in! I mean, really! Who lives to see themselves the great, great aunt of a teenaged descendent!?

Little, being the operative word, mom would often cut up oranges and bananas and put them in a small ramekin, add a splash of orange juice and a sprinkle of sugar and voilà! Fruit Salad was ready very quickly, and it fit the bill. When she wanted to make it fancy, she'd add a sprig of mint leaves on the side as a garnish.

why are fruits healthy?

Fruits are, by and large, deeply hued and vibrantly coloured foods. Generally speaking, in nature, when it comes to foods, the brighter the colour, the more antioxidants, vitamins, phytonutrients and flavonoids they contain. Chock-full of nutrition, they are low in calories by weight and high in fibre. And you can find some excellent BC and local fruits up at the market.

Many fruits make The 150 Healthiest Food on Earth list in Jonny Bowden's book of the same name. The fruits that make his list that are available at our market are apples, apricots, blueberries, cantaloupes, cherries, grapes, honeydew melons, peaches, raspberries, pears, and watermelon.

Cherries are cancer fighters. A cherry is "loaded with anti-inflammatory, anti-aging, anticancer compounds that don't show up on your average nutrition facts label. The cancer-fighting agents in cherries include a flavonoid called quercetin, as well as ellagic acid and perillyl alcohol."

Raspberries are fibre powerhouses.
Raspberries have the ellagic acid as well and they are, per calorie, one of the most high fibre foods on the planet! Apparently, "you have to eat more than 100 calories' worth of black beans to get the same amount of fibre." Raspberries also contain anthocyanins that help to minimize pain and inflammation with arthritis.

Blueberries are brain food.
Containing "compounds like anthocyanin that are antioxidant and anti-inflammatory," they help to reduce the effects of Parkinson's, Alzheimer's, diabetes, heart disease and conditions of aging like arthritis. They help reduce eye strain and improve night vision. Bowden emphasizes, "These compounds by themselves would be enough to land blueberries on anyone's list of super foods. But blueberries do even more. They actually help neurons in the brain communicate with one another more effectively." Enhancing your brain's "signalling" ability, blueberries are the "ultimate memory food."

Watermelons and Cantaloupes are coming in from the fields
Many fruits also contain a lot of water. Foods with a high volume, but low calorie count, like the cantaloupe and honeydew melon, with 90% of their volume coming from water, really do help to keep you satiated, feeling full and not deprived, in any weight loss endeavour. Bowden writes, "research study after research study [has shown] that water in melon goes a long way toward filling you up...water in foods seems to do this more than water that you drink alongside foods. Hence melons and soups do a better job of controlling appetite than solid food plus a glass of water." Cantaloupe also lowers your risk of high blood pressure and stroke and its vitamin A helps you to boost your immune system and ward off infections. Honeydew is a potassium superstar which really helps to lower rates of heart disease and stroke.

Uninspired by a simple mint leaf garnish? There are many, many ways to dress up a fruit salad. You can:
  • add a dusting of icing sugar and an edible flower garnish (like pansies or nasturtiums) 
  • put the berries over a scoop of gelatto, sorbet or ice-cream
  • top with a wonderfully tart and refreshing lemon sauce (see the recipe below)
  • nestle the berries in a bed of "fruit soup" (essentially a smoothie, made without ice, served in a bowl)
  • nestle the berries in a bed of "fruit gazpacho"(essentially a smoothie made with ice, served in a bowl)
  • fill a half melon (like a small cantaloupe) with fruit salad and you have fruit salad in a natural & beautiful edible bowl
  • top with a dollop of your favourite yogurt and drizzle with a scant pour of caramel sauce
  • arrange bite sized pieces of fruit on a platter and serve with a fruit dip, like a favourite yogurt, on the side
  • then, let's just say you have a batch of jam that doesn't gel properly (yup, it happens to the best of us!)... drizzle it on top of a dollop of yogurt to cap your salad off with a beautiful crown
  • take a mortar and pestle and squash a few mint leaves into a little fruit sugar and sprinkle sparingly on top of your berries
  • bake a meringue nest and fill it with a combination of your favourite chopped market fruit and whole berries, lightly toss with lemon sauce (see recipe below), and top with yogurt (or decadent whip cream)

The key to making a great fruit salad is that you don't mess with the inherent beauty of a berry: you don't mess with its structure (it needs to remain firm and not mushy), you don't mess with its colourful beauty (you still need to see its intense colour and distinctive geometrical shape) and you enhance (not disguise) its deliciously sweet or tart flavour. And this recipe does just that.

ingredients
1/3 c. freshly squeezed lemon juice
1/3 c. water
2 tablespoons sugar

directions
Combine the lemon juice, water and sugar in a small saucepan. Bring to a boil. Simmer over low heat for 2 minutes. Remove from the heat and let cool to room temperature. Drizzle your fruit salad with syrup and toss gently. Chill in the refrigerator for 1-2 hours. This syrup will work with approximately 8 cups of fruit.

Use any fruit you'd like, from berries through to stone and cored fruits. Don't remove the skins, as many of the nutrients are contained there. The key to serving a healthful and nutrition-filled dessert is to use any sugar enhanced item sparingly.

It's prime time for market shopping, with more fresh fruits and vegetables ready to eat than any other time of year. Try out some new recipes this week and do your shopping at market: the local produce will enhance all of the flavours and make any recipe better! If you're looking at a busy week and don't have time to cook, be sure to visit our ready-to-eat vendors for simple and healthy dinner options.

We postponed the ingredient challenge last week due to the extreme heat, but are rearing to go for market on Wednesday: Stop by the info tent to take part in this week's SWEFM challenge: Berry Bonanza! Our vendors have done their best to come up with berry-themed items, so be sure to drop in for your chance to win! Fruits of Sherbrooke will be at market this week with their popular preserves made from rescued fruit in Edmonton neighbourhoods. This non-profit society does wonderful work in our community and makes fantastic jam. It's a win-win! 

Mini Kitchen makes fantastic Indian and Thai food for you to take home, heat and serve. If you haven't already, be sure to pick up her delicious samosas with dip! 

The Mallow Fellow is our number one destination for building the ultimate s'more. Don't waste your summer campfires with boring supermarket marshmallows; mix it up with one of their exciting flavours that will make your childhood favourite even better!

Knosh Catering is back with their unbelievably delicious U.K. comfort food. They love to use fresh fruits from our B.C. fruit vendors at SWEFM... Ask them what's on special this week!

Bully Food Truck is a SWEFM staple and will be offering their fantastic comfort food again this week. They have great salad options for those looking for something a little lighter in the summer heat!

Fat Franks is back and will be ready to serve you their delicious hot dogs and smokies with all the fixings! 

The Pink Kernel will be at market offering mini doughnuts, cotton candy and snow cones. Their iced tea is a popular treat for thirsty kids and adults!

Original Canadian Kettle Corn will be serving up their freshly-popped kettle corn at market this week! If kettle corn isn't your thing, they also have salty popcorn for the crunch without the sweetness!

Currant & Blueberry Muffins



We all live busy lives, and it can be difficult to make time for breakfast before leaving for the day. Buying breakfast on the go often means eating poorly-prepared, over-priced and unhealthy food on a regular basis, which isn't good for our bodies or our wallets. A change is necessary!


Muffins are an easy fix for breakfast as you can continue to follow a "grab and go" morning routine with some easy preparation on the weekends. The blueberries are full of antioxidants and fiber, and the currants are a great boost to your immune system when you're feeling busy and run-down. You can find blueberries and (sometimes!) currants at the B.C. fruit vendors at our market. This recipe featuring Gold Forest Grain's Red Fife flour makes muffins that are tart, sweet, and delicious for breakfast with some salted butter, apple slices and herbal tea!

Currant and Blueberry Muffins

ingredients

2 c. Gold Forest Grains Red Fife Whole Wheat Flour
5 tsp. Baking powder
1/2 tsp. Salt
2 tbsp. Sugar (I used honey powder)
1/3 c. Honey, melted
1 egg, lightly beaten
1 c. milk
1/2 c. Butter, melted
1/2 c. Red currants
1/2 c. Blueberries, fresh

instructions

1. Sift together flour, baking powder and salt. Reserve sugar.
2. In a separate bowl, combine egg, milk, and melted butter.
3. Pour melted honey ingredients over the dry mixture. Mix well, until clumps are very small.
4. Pour liquid ingredients over dry mixture. Stir only enough to dampen flour.
5. Add currants and blueberries; if using fresh, toss the berries in a small amount of flour before adding.
6. Spoon batter into buttered muffin tins or silicone molds and sprinkle reserved sugar on top of muffins.
7. Bake at 400 F for 15-20 minutes, or until a toothpick comes out clean.
8. Enjoy!

Note: I’ll be honest- I’ve struggled with making Gold Forest Grain products consistently work in recipes. Please note that this recipe is meant for the Red Fife flour, which is a relatively coarse whole wheat flour. If you try and use all purpose for this recipe, it will yield different results!
