The Terwilegar Riverbend Advisory Council will be promoting their 10K Rock N' Run on June 1st again this week. The run is coming up fast and will feature musical acts all along the route, so be sure to sign up for this fun Sunday event!
  

The inflatable slide will be here again this week! It's only $5 for unlimited rides all market and is the perfect way to burn off extra energy (or that extra cupcake!) before bedtime. If the weather isn't perfect, don't fret! Bob the slide guy has also brought a bouncy castle combo unit for hours of fun, even in the wind!
 






The Sprouts Program for kids continues this week. Children who enrolled last week between 4-12 will receive a $2 token to spend with our fruit and vegetable vendors. Be sure to stop by to fill out an an entry to win a healthy prize pack from Choose Well! There are currently no spaces available in Sprouts, but you can put your child's name on the waiting list. Our resident balloon artists, Pretzel and Russ, and the face painter extraordinaire, Lady Dolphin, will be joining us again this week.

Red Apple B.C. Fruit is back this week with their delicious B.C. apples and pears. Ask them for a recommendation when choosing your variety; they always pick the best!

 
There's nothing like fresh local vegetables to make your salads and dinners better. Check out what our veggie vendors are bringing this week:

Dargatz Family Farm will be bringing their herb pots and other plants to market again this week.
Holden Colony will be bringing a variety of fresh vegetables, including peppers, cucumbers and tomatoes, along with root vegetables and delicious preserves.
Riverbend Gardens will have radishes this week fresh from the field, as well as herbs, tomato plants (see the varieties available here), flowers, vegetable seedlings, hanging baskets, along with potatoes, carrots, onions and cabbage.
S4 Greenhouses will be bringing their freshest tomatoes, cucumbers, peppers and lettuce (along with those adorable $2 bags for our little Sprouts).


Our meat line-up has some old favourites and some new vendors to try: 

Sunworks Farm brings a variety of grass-fed and organic meats to market. They have delicious samples, so be sure to swing by and try one!

Warm Panzanella Salad


This recipe comes to us this week from Dr. Darcy Dietz, the main sponsor of our Sprouts Kids' Club. A local orthodontist, he has a passion for local food and for the culinary arts. On the weekend he sent me photos of a dinner that he made that looked mouth-wateringly delicious! He serves this salad warm, with a halibut steak (and because of this recipe, it's time to let the proverbial cat out of the bag... in June, we will have a wonderful, ocean-wise fish seller at our market that runs a very popular CFA, called Skipper Otto's).  The beauty of this dinner is that the traditional starch is absent, and you won't miss it a bit!

Dr. Dietz is always experimenting with his food, with what it means to truly cook local, and he is constantly learning new techniques, experimenting with new combinations and growing his own food. In this weekend dinner, he caught the halibut and grew the sprouts that garnish this salad. 

Panzanella Salad

Panzanella salad is served warm. Made from mini-roma tomatoes, red and yellow peppers, red onion, shallots, kalamata olives and capers, it is seared and tossed with a red wine vinaigrette and then tossed with the rosemary bread croutons that have been fried in butter. 
Toast the croutons by pan frying them in
grape seed oil and butter.

Dr. Dietz says, "This is a great substitute for potatoes, rice, or pasta. The textural crunch of the ingredients is great beside the halibut or any main protein. I have vegetarian friends who would be happy to eat this as their only course."

Today he shares with us this recipe.

He writes, "I cheated. I’ve done this so many times that I had to look up quantities. Ina Garten’s recipe is spectacular and most true to what I do, but I pre-fry the bread in a bit of grape seed oil and butter. I also toss the other ingredients into heat as I like everything to be hot for this particular presentation. 

A Farmers' Market is the perfect place to pick up
fresh red onions and incredibly sweet grape tomatoes.
The farmer’s market is perfect for picking up the tomatoes, basil, peppers, bread (although the rosemary-olive bread at the Italian Centre is superb) and parsley. 

I added ½ cup of capers, and 1 cup of sliced in half Kalamata olives.  I used the small mini-Roma greenhouse tomatoes.

And, if I can be so bold, the vinaigrette is great but substitute 30ml of FISH SAUCE instead of salt. That flavour punch is terrific Umami.  And you can sub red wine vinegar for the champagne vinegar which for some reason is hard to find in town exempt at Sunterra." Darcy learned a  lot about the culinary arts during his mini internship at Stella, a wonderful restaurant in Lake Tahoe. There, Chef Jacob's Filippino wife suggested the fish sauce substitution that is used in this recipe adaptation

ingredients 

For the salad:
3 tablespoons good olive oil

1 small French bread or boule, cut into 1-inch cubes (6 cups)

1 teaspoon kosher salt

2 large, ripe tomatoes, cut into 1-inch cubes
 or the equivalent volume of small grape tomatoes
1 hothouse cucumber, unpeeled, seeded, and sliced 1/2-inch thick

Topped with fresh sprouts and a pan-fried
halibut steak, this goes brilliantly with a
chilled, crisp white wine.
1 red bell pepper, seeded and cut into 1-inch cubes

1 yellow bell pepper, seeded and cut into 1-inch cubes
1/2 red onion, cut in 1/2 and thinly sliced

20 large basil leaves, coarsely chopped

3 tablespoons capers, drained
1/2 cup capers
1 c. sliced kalamata olives

For the vinaigrette:

1 teaspoon finely minced garlic

1/2 teaspoon Dijon mustard

3 tablespoons Champagne vinegar

1/2 cup good olive oil

1/2 teaspoon kosher salt
 OR 30mL fish sauce***
1/4 teaspoon freshly ground black pepper


directions 
Heat the oil (or oil & butter) in a large saute pan. Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed.

For the vinaigrette, whisk all the ingredients together.

In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers. Add the bread cubes and toss with the vinaigrette. Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavors to blend.

We're launching our Experience This! table at SWEFM this week. Stop by the info tent for a themed display of fantastic products from our vendors, nutrition tips, vendor challenges and more! We're kicking off the fun with Everything Garden this week, where you'll be able to spot all of our flower and garden-related products all in one place before you get shopping. It's just in time for your lovely spring gardening in the days and weeks ahead!

Recipe: Mimosa Salad

One of our goals here at the market blog, and through the Sprouts Club recipes, is to show you just how easy it is to make meals at home... how easy it is to cook simply and affordably.

This recipe does just that, and it comes to us from two new vendors to our market this year, Dagmar and her daughter, Christina, authors of the cookbook, Forgotten Favourites.

Forgotten Favourites is a cookbook that brings to life recipes that are a fond memory for so many from their family dining room table.

Dagmar says that her goal is to make cooking at home an easy endeavour.  And she firmly believes that wonderful meals prepared at home and shared together with your family are an easy and affordable thing to do. 

With people relying more and more on take out food, ready-to-go meals and eating in restaurants, the art of home cooking is being lost. Dagmar and Christina want to help you remember what good home cooking is, and they want to help you rekindle that love of forgotten favourites in your own home. They want to bring back the tradition of family meals and gathering with friends around the dining room table, sharing simple, tasty dishes that you would be proud to serve.

Butter Lettuce at S4 Greenhouses

They are sharing this recipe with you today because you will find many of the ingredients at an early spring farmers' market... hot house butter lettuce, farm fresh - free range eggs, radishes (one of the first field crops to ever come in!), greenhouse grape tomatoes and honey.

Christina and Dagmar will be at the the market each week from May 21 until June 18 selling their cookbook, full of those feel good, heritage recipes.
Eggs from Dargatz Family Farm

  • Lettuces are available at S4 Greenhouses, Dargatz Family Farm and Holden Colony. 
  • Farm Fresh eggs are available at Sunworks, Holden Colony and Dargatz Family Farm. 
  • Small, grape tomatoes are available in a rainbow of colours at S4 greenhouses and Dargatz Family Farm. 
  • Radishes can be found at Riverbend Gardens, Dargatz Family Farm and Holden Colony. 
  • Mini tomatoes come in so many varieties! Expe
  • And honey is available at Holden Colony.

MIMOSA SALAD

This colourful salad of bright green lettuce topped with chopped egg can be served at any meal.

Yield:  8 servings

Wash and spin dry:   3 heads of butter lettuce

Alberta honey
Cover:   3 large eggs with enough cold water to cover by 1 inch.  Bring to boil over high heat. Immediately remove from heat and let stand 20 minutes.  Drain and run cold water over the eggs for 2 minutes.  Gently crack the shells and cover with fresh cold water.  Leave for 30 minutes or so. Drain and peel.

Drain:                                     
one 540 ml. jar mandarin oranges

Wash:                                     
1 container grape tomatoes

Wash and Slice:                  
Radishes and fresh, washed, ready to eat tender lettuces from
Dargatz Family Farm
6 to 8 radishes

Make dressing:
Combine:                               
¼ cup olive oil
4 tsp. red wine vinegar
 2 tsp. Dijon mustard
1 pinch salt
1 Tbsp. honey (or 1 tsp. granulated sugar)

Assemble Salad:
Line individual salad plates with the lettuce.  Spread mandarin orange sections over the lettuce.

Top with the grape tomatoes and finely chopped egg.  Garnish with radish slices.
Drizzle with the dressing just before serving.
